Put an Egg on It

My favorite thing to do with leftover veggies is to warm them up, throw some cheese on them and top with a runny yolk egg.  Perhaps the best example of this delicious combo is made using leftover roasted root vegetables.  As Top Chef insinuated, putting an “egg on top” has been a trendy fad in restaurants for some time.  Fad or not, I have been doing it for years and have no plans on stopping!  It is a simple, cheap and resourceful way to add protein to any meal; and it instantly turns leftover veggies into a balanced plate within minutes.  Try this idea out with your Thanksgiving leftovers and you won’t be disappointed!

Here’s my favorite combo this time of year…

Roasted Brussel Sprouts and Butternut Squash, with a clove or two of Roasted Garlic, sauteed Sweet Onions, and a sprinkle of shredded Mozzarella Cheese.  Top with a lightly fried, runny yolk Egg (either over easy or sunny side up) and season with coarse sea salt and freshly ground black pepper!

Got any leftover Cranberry Relish, Gravy, carrots or Potatoes?  Those are great add ins as well!  The sky is the limit, so let your leftovers guide you.  Enjoy!
