Blueberry Crisp – a Simple Summer Pleaser

Crisps are the easiest desserts ever.  They come together in just minutes and they can be made with pretty much any fruit.  Plus, they are very kid friendly to make and need only a few ingredients.  This July I wanted to take advantage of all those delicious blueberries that are in season…so here is an easy blueberry crisp recipe that is sure to please!

For the Fruit Filling: 

6 Cups Blueberries (3 Pints)

1/2 Cup Sugar

1/2 Cup Brown Sugar

1/2 Cup Flour

1/3 tsp Cinnamon

1/8 tsp Nutmeg

For the Crisp Topping:

1 1/2 Cups Flour

1 1/2 Cups Old Fashioned Oats

1 Cup Brown Sugar

1/2 Cup Melted Butter

First, sort through the Blueberries to remove any stems or bad berries; then rinse and air dry.

sort and clean the blueberriesNext, add all the fruit filling ingredients to a bowl.

Fruit Filling ingredientsVery gently mix together, making sure you don’t pop any of the fruit.  Continue until all the berries are coated evenly and place in a lightly coated (with pan spray) baking dish.  I used a 2 1/2 Quart dish with a good depth.  If you use a more shallow dish, make sure to watch your baking time because it could be shorter.

Evenly coat blueberriesMix together Crisp Topping ingredients, using your hands to make sure the melted butter reaches all the oats and sugar consistently.  You will notice ingredients clumping when properly mixed.

Crisp ToppingSprinkle crisp topping evenly on the top of the fruit filling.

Blueberry Crisp

Bake in a preheated oven at 375⁰ for 40 minutes -or brown and bubbly. Scoop out with a large spoon and serve warm.  It is especially good with a scoop of vanilla ice cream!  Enjoy.
