8 oz frozen cut leaf Spinach (thawed and drained)
1 TBS pesto
½ cup Marinara
8 oz roasted cauliflower
2 TBS red bell peppers (chopped)
2 TBS onions (chopped)
¼ cup shredded Mozzarella
Preheat oven to 420°. Sauté peppers and onion in a little bit of olive oil till softened. Set aside.
Coat the bottom of a small cast iron pan (or comparable oven safe dish) with pan spray or olive oil. Mix spinach with pesto then line it in the bottom of the pan (like a crust). Layer on the cauliflower and then spread marinara on top. Add the peppers and onions and then sprinkle with Mozzarella.
Cook in oven for about 12 minutes, or until cheese is browning and sauce is bubbling up on the sides. Let cool for 5-10 minutes and then enjoy!
