Broccoli, Sweet Potatoes and Veggie Beef with Couscous

asian style veggies and beef & couscous½ head of Red Cabbage

1 crown of Broccoli (chopped)

3-4 Carrots (peeled and sliced)

3 palm sized Sweet Potatoes or Yams (peeled and cubed)

1 packaged of Vegetarian Beef (I use Nature Soy)

1 cup Couscous

1 stalk Green Scallion

Braggs or Tamari

Canola Oil

Sesame seeds

Sriracha or Sweet Chili Sauce

 

Boil sweet potatoes in a pot of water for about 12-15  minutes (till soft, but not mushy).

In a sauté pan heat a small amount of water and add carrots and sliced cabbage.  Steam for about 8 minutes.

Bring 1 ½ cups of water to boil, add a dash of olive oil and the couscous.  Remove from heat and leave covered for 5-10 minutes.

Drain any remaining water in the cabbage pan and add canola oil.  Add broccoli, vegetarian beef, and a healthy splash of Braggs and cook over medium high heat for 8-10 minutes stirring often. Toss in drained sweet potatoes, a sprinkle of sesame seeds and mix together.

Fluff couscous with a fork and scoop onto the bottom of the plate.  Cover with the veggie mix and garnish with chopped scallions.   Serve with Chili sauce and enjoy!
