Grilled Veggies

grilled veggiesOne of the things I love to add to a “Plain Jane” kind of meal is grilled veggies.  Everything that is grilled gets that wonderful flame kissed flavor, and veggies are no exception.  First choose your vegetables and cut into similar sizes to ensure even cooking times.  If one will need more time to cook, start it on the grill before the rest.  In a bowl, toss the veggies in a little bit of olive oil, salt and pepper and then throw them on the grill.  It is that easy!  I like to grill stir fry style using a grill tray I found at Home Goods for under $10; but you could also use skewers or place bigger items directly on the grates.  Don’t forget to toss or turn as needed to avoid burning.

Here are some veggies that are easy to grill:

Peppers (any kind)

Onions & Leeks

Cabbage

Squash – particularly Zucchini and Yellow

Carrots (YUM!)

Asparagus

Broccoli

Cauliflower

Green Beans

Mushrooms

…and even Tomatoes

Oh, and don’t forget you can grill in the winter too!  The picture above reflects a lovely dish of Red Cabbage, Carrots, Zucchini, and Red Peppers we just had in January.
